Jollof rice has its own way of cooking in various African countries. For people allergic to seafood, since these are optional you can always replace them with others that you feel comfortable with.

Jollof Rice

Ingredients:

  • 5 cups of rice
  • ½ kilo of shrimp, crayfish
  • 2 kilograms of fish, beef, mutton or chicken, pork
  • 1 medium-sized onion
  • 3 red and green pepper
  • tomatoes
  • Green peas
  • Red pepper, onion, and tomatoes (blended)
  • Corn beef
  • Salt
  • Vegetable oil

Method:

Shrimp should be peeled, if you intend to use a little bit of fish, beef, pork, mutton, and chicken, they should be steamed and boiled together with the exception of fish.

Add some salt, onion, and spice and allow it to boil for 30 minutes and then set aside. Add onions, tomatoes, red and green chilies. Pour some water into a pot, bring it to boil, and add rice to it to boil, allow the rice to boil for 10 minutes, then pour the rice in a sieve and dip the rice in cold water. 

Pour some water in the pot, add some portion of mixed red chili, tomato, and onion, add some salt, and a spoon of vegetable oil to the pot. Pour in the dried onions, red and green chilies, and boil them. Pour half-cooked rice, green peas, and corn beef into the pot and allow it to cook for 20 minutes.
